WHAT A WEEK

Hello everyone…can’t believe it is Friday already..I have a long blog today so get comfy…

First off I had a request for a recipe from Tasha..when our boys were growing up we always had a houseful of kids,most of them called me Nana and I feel like I half raised some of them.. sometimes we ended up feeding them..LOL, I found a recipe for Corned Beef Casserole and decided to try it. I wasn’t sure if anyone would like it but I made it anyway…OH WOW..it was a HIT..everyone loved it..so just for you Tasha here it is…big hug girl..hope your family likes it like you do..

1(8oz) package medium egg noodles, 4 tablespoons butter or margarine divided, 1/2 cup chopped onion, 1/2 cup chopped green pepper, 2 cups shredded cheese, divided, 1 12 oz can can corned beef broken into little pieces, 1 10 3/4oz. cream of chicken soup, 1 cup milk, 1/2 cup fine dry breadcrumbs.

Cook noodles according to package directions, drain, Melt 2 tablespoons of butter in skillet, add onion and green peppers, sauté’ 5 minutes..in a buttered 2 1/2 quart casserole, layer half the noodles, half the onion and peppers, 1 cup cheese and all the corned beef, repeat the layers of onion and peppers and cheese, stir together soup and milk and pour over casserole, combine breadcrumbs with the remaining butter and sprinkle over the top. Bake at 350 degrees 40 minutes.

This works fine without the green peppers and onion, Chase won’t eat them..It’s easy to make and great for when you don’t want to cook a lot, sometimes we just had the casserole, sometimes I added a vegetable or salad and rolls.

I have sometime to talk to you about today..I am taking a leave of absence for a month..as most of you probably know my daughter Angie is having a baby, a little girl and her name is Macy Reese (the Reese is after my dad) Miss Macy has decided she doesn’t want to wait until September 19 to join the family, Angie has dilated to 3 and still having pains off and on..also the baby is larger than she should be at this stage. They are doing a sonogram on Wednesday and depending on how big she is, they may induce labor.  Angie doesn't want her to be so big that she can’t have her naturally.

I have decided (to make sure I don’t miss her arrival), to leave tomorrow to go to stay with them. I want to be able to help Angie in the house and with the boys. She is still trying to work. Then I have to be there after they get home so I can spoil Macy as only a grandmother can…and take care of Angie.  I’m so excited about being nana again..I know this will be my last grandchild.  God has really blessed me with 4 GS, 2GGC, and now another GC, my 1st little girl.  I have been there with they were all born and in the delivery room with the 4 boys.  Was at the hospital when the GGC were born.

I won’t be able to do a blog, unless Angie can teach me how to use her Mac..I don’t learn new things easily now…lol 

My sweet sister went on a shopping spree for me, she got me new tops, and pants and a jacket, all of them are just beautiful..I’m so proud of them all..thanks sis, she wants me to be a well dressed Nana…She even got me a pink one to wear when Macy is born…wasn’t that thoughtful..my sister is always doing something for someone..I love you lots..

Now down to business…lol

Wonderful news that you get to be there for the new little one. Prayers are with Angie and the baby that everything is easy for the birth. Know how much you treasure every moment you get to have with all the children, no matter how old they get. And don't overdo as you surely do not want to get sick again. Stay cool, hear it's a bear down south.
